Chongqing hot pot grew around the city’s river ports and working communities. The beef-tallow broth, nine-grid pot and quick-cook offal are part of a shared table rhythm, not just a spice challenge. Start with the culture, then choose your heat level.

  • The nine-grid pot is practical: quick-cooking tripe and intestine can stay near the surface while meat, tofu and noodles take longer.
  • The city’s classic dipping sauce is usually built around sesame oil, garlic and coriander; taste it before adding more chilli.
